Owner of Big Nicks Bakes Pizzeria
Nick's passion for pizza was built through more than a decade of restaurant, catering, and bakery experience. During the COVID pandemic, he dedicated countless hours to teaching himself the craft of pizza dough, experimenting with techniques and learning what it takes to create truly exceptional pizza from scratch.
As his passion grew, so did his knowledge. Working in bakeries further developed his understanding of fermentation, dough development , and the importance of quality ingredients. Combining years of hands-on food service experience with a commitment to continuous learning, Nick founded Big Nicks Bakes Pizzeria to bring authentic Neapolitan pizza directly to the Austin community.
Today, every dough ball is handcrafted, every pizza is baked fresh, and every event is an opportunity to share the same passion for pizza that inspired the journey from the very beginning.
Nick believes great pizza brings people together, which is why he loves serving families at farmers’ markets, corporate gatherings, weddings, and community events throughout the Austin area.

Mike serves as the Head Chef at Big Nick’s Bakes Pizzeria, bringing more than 20 years of culinary experience to every event. His career has taken him through high-end restaurants and startup kitchens across the country, where he developed a deep appreciation for quality ingredients, technique, and hospitality.
Inspired by his grandmother’s home cooking at an early age, Mike has always believed that great food has the power to bring people together. Today, he combines classic pizza traditions with creative flavors, helping craft a menu that is both authentic and memorable.
Whether serving guests at a corporate lunch, wedding, or community event, Mike is dedicated to creating fresh, handcrafted pizzas that leave a lasting impression.
